Peanut Butter Cup Brownies!!!

This recipe is super easy to follow and wonderful after school/ work treat! They are kind of rich, but if you are a peanut butter and chocolate lover they will be perfect for you! I have pictures of the mini brownies, but also I took the left over batter and poured it into a spring form pan and made a sort of peanut butter brownie tart. Anyway you make it, it is sure to be a success!!!

Prep time: 15 minutes
Bake time: 13-15 minutes
Makes 40 mini brownies

1 box of your favorite brownie mix
1/2 cup of peanut butter chips
1/2 cup of semi sweet chocolate chips
3/4 cup creamy peanut butter

Preheat oven to 350 degrees. Spray or grease 40 mini muffin cups.

Prepare boxed brownie mix as directed. Spoon batter evenly into muffin cups ( about 1 heaping teaspoon). Bake for 13-15 minutes or until top is set and a toothpick inserted into center comes out slightly wet. After brownies are out of the oven, wait for centers to fall. This will happen upon cooling. If not then tap the centers with the back of a teaspoon to make a hole for the peanut butter.

Place peanut butter in a small microwave-safe bowl. Microwave on high for 45 seconds then stir. While brownies are still warm spoon about half a teaspoon of peanut butter into the the center of each brownie. Top with semi-sweet chocolate chips and peanut butter chips. Cool completely in pan.

Grab a glass of milk and enjoy!!!!

Oreo Stuffed Chocolate Chip cookies

First off let me say how extremely easy these cookies are to make! And soo very delicious! Okay so don't blame me if you make these and go up 3 pant sizes in a week because they do have 2 stick of butter and oreos in them... a girl's feel good food right? Maybe you could give them to that really skinny girl you don't like! Or a family member, or an entire classroom full of children. They are sure to be a favorite.

Now the recipes that is on here calls for you to make your own chocolate chip cookie dough. If you simply don't have time or don't want to go to all the trouble of making them from scratch, buy a tube of store bought cookie dough... if you want to make the cookies on a smaller scale, because these are pretty large, you can buy the cookie dough squares and use mini Oreos.

Makes: 24 gigantic cookies
Prep: 25 minutes
Cook: 13 minutes

Ingredients

  • 1 cup (2 sticks) butter
  • 3/4 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 3 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups semi sweet chocolate chips
  • 1 package Double Stuff Oreo cookies
Directions

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, cream butter, brown sugar, and granulated sugar together with a mixer until well combined. Beat in eggs and vanilla.
  3. In a medium bowl mix the flour, salt, and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined.
  4. With a cookie scoop, spoon, or your hand, form balls with the dough.
  5. Place one ball on top of an Oreo cookie, and another ball on the bottom. Seal edges together by pressing and cupping in hand until Oreo cookie is fully enclosed within the dough.
  6. Place onto parchment paper or sprayed cookie sheets and bake cookies for approximately 13 minutes or until golden brown. Let cool for 5 minutes before transferring to a cooling rack.
  7. Grab a glass of milk and enjoy!!!!

And that's how it is done ladies and gentlemen! ENJOY!!!!
