This is my first cobbler to ever make and it was really easy to assemble... Not too much extra has to be done! Its really delicious especially served with ice cream!
Yields: 6 servings
Cook time: 35-40 minutes ( time varies with ovens and baking dishes)
Prep time: 45 minutes
Ingredients:
5 cups strawberries, hulled and sliced
1/2 cup granulated sugar
1 Tbsp corn starch
1 tsp orange zest
For cobble crust:
2 Tbsp granulated sugar
1 cup all- purpose flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup butter
1/4 milk
1 large egg, lightly beaten
1/2 tsp vanilla extract
Directions:
- Preheat oven to 350 degrees. In a medium bowl, mix the strawberries with the sugar, corn starch, and orange zest. Let sit for 30 minutes to bring out the juices.
- In a separate medium bowl, whisk together 2 Tbsp of sugar, flour, baking powder, cinnamon and salt. Cut the butter in with a pastry blender or your hands. Combine until the mixture resembles coarse crumbs. Add in the milk, egg, and vanilla, stir until just moistened. Don't over mix!
- Pour strawberries into a 2 quart casserole dish or individual casserole dishes/ ramekins. Drop the cobbler batter on top of the fruit. Lightly sprinkle sugar over the cobbler topping. Bake for 35-40 minutes until cobble crust is golden brown and filling is bubbling and kind of thick.
- Serve with whipped cream or vanilla ice cream if desired.
It's messy but so delicious!
